When Sam was old enough to set out on his own, he chose to cut hair rather than follow in his father’s footsteps. For years he was happy with his career choice and excelled at his profession. Like his father however, running a restaurant was in Sam’s blood and kept calling out to him. In time he realized that he’d never left the restaurant business behind. So Sam opened a restaurant.
It’s About Thyme serves the same dishes Sam was brought up with, that his family served in their restaurants both here and in Lebanon but with his own unique inspirations and subtle improvements. Sam is a culinary experimenter, spending much of his time trying out new ideas and variations and improving on the food from his childhood. “All across Lebanon and the Middle East people serve their own takes on the same dishes. It can change from region to region, or even from town to town. What I do is in line with a long tradition of putting your own stamp on traditional dishes, making them your own.” In doing

There is nothing frozen here. Nothing comes premade. Sam is the creator of each recipe, inspired of course by his family’s ancient recipes, but he is also the chef.
